Bolar Roast with Smashed Potatoes

This dish is perfect for a cosy Sunday roast. The Meat With Us grass-fed, certified-organic bolar beef is juicy, tender and packed with flavour, pair with some extra crispy, smashed potatoes and enjoy!

Ingredients: 

Bolar Beef: 

1.2 kg Meat With Us certified organic bolar roast 
1 tsp ground coriander
1 tsp cumin
1 tsp sweet paprika
½ tsp dried oregano
1 large sprig of thyme 
2 cloves garlic, crushed
¼ cup oil

Smashed Potatoes: 

1 kg baby potatoes
3 tbsp oil 
Fresh rosemary sprigs, to garnish 

Method:

Bolar Beef:

Preheat the oven to 230°C.

Combine all the spice mix ingredients in a small bowl. Rub over the Meat With Us bolar roast and place on a wire tray on a baking dish.

Reduce oven temperature to 200°C and place in the oven to roast. For a medium-rare finish, roast for 40-45 minutes. 

Remove the bolar roast from the oven and place on a warmed plate, cover loosely with foil and leave to rest for 10-20 minutes before carving.

Smashed Potatoes: 

Preheat the oven to 200°C. Place the potatoes in a large pot of salted water. Bring to a boil and cook for 20 minutes, or until tender. Drain well.

Arrange the potatoes on a large baking tray lined with baking paper. Using a potato masher, or the bottom of a glass, gently squash each potato to break it open. Drizzle with olive oil and season well with salt and pepper.

Place in the oven and roast for 25-30 minutes, or until the potatoes are golden and crispy. 

Sprinkle with rosemary and serve alongside the bolar roast.
